CitricAcid is the most common acids in the world, it is naturally concentrated in avariety of fruits and vegetables and most notably citrusfruits. Lemons and limes have particularly highconcentrations of the acid; as with most organic acids, citric acid is a weakacid, with a pH level between 3 and 6. It is a weak organicacid thathas the molecular formulaC6H8O7. It occurs naturallyin citrus fruits.CitricAcid can be obtained as an anhydrous (water-free) form or as a monohydrate. The anhydrous formcrystallizes from hot water, while the monohydrate forms when citric acid iscrystallized from cold water. The monohydrate can be converted to the anhydrousform at about 78 Â°C. Citric acid also dissolves in absolute (anhydrous) ethanol (76 parts of citricacid per 100 parts of ethanol) at 15 Â°C. Citric acid can be esterified at one or more of itsthree carboxylic acid groups to form any of a variety of mono-, di-,tri-, and mixed esters. More than 50% of Citric Acid production, used asan acidity regulator in beverages, some 20% in other food applications,20% for detergent applications, and 10% for applications other than food, suchas cosmetics, pharmaceuticals, and in the chemical industry.
